One of my all-time favourite recipes is this fish pie that my Mum used to make at home. It’s a great, healthy family meal that I love to make as a comforting dinner, served with fresh veg such as sweetcorn, petit pois and French stick beans. The ingredients can be as simple or as varied as you choose and can be a real crowd-pleaser – I once made it on Christmas Eve for a group of 12! In this recipe, I use a mixture of white and sweet potatoes, a whole medley of fish and a white sauce. Fish is naturally low in saturated fat but high in essential Omega oils, making this is a healthy and very nutritious dish. The other great thing about this dish is that it can be made in advance, covered and left in the fridge for up to 24 hours before you cook and eat it, making it a great meal to come home to after a day’s training!
Ingredients:
Sweet potatoes
White potatoes (optional, can just use sweet potatoes if preferred)
Milk (approx 1 pint) (can use skimmed if preferred)
2 tablespoonfuls flour
Approx 2 ounces butter
Salt and pepper to taste
Mixed fish (I like to use salmon, smoked haddock, cod, prawns, smoked salmon)
Hardboiled eggs (2-3)
1. Peel potatoes, chop and boil for 15-20minutes until soft enough to mash. Drain and mash with a little butter and milk (can use low-fat spread). Season with salt and pepper.
2. Place raw fish (salmon fillets, cod, smoked haddock) in an ovenproof dish with enough milk to cover. Add salt and pepper then cover with foil and bake in the oven for 15-20minutes until fish is cooked and flaky.
3. Prepare a roux by melting the butter in a non-stick pan and adding the flour, stirring continuously for at least 1 minute over the heat to allow the flour to cook. Slowly add the milk while stirring, adding the milk from the fish when it is cooked (clever timing needed here!) Create a white sauce as thick or runny as you like it.
4. Break up the cooked fish into chunks and place in an ovenproof dish. Mix in the prawns, chopped hardboiled eggs and smoked salmon. Pour the white sauce over; making sure everything is mixed up. Add the mashed potatoes and create a textured surface which will turn deliciously crunchy in the oven.
5. Bake the pie in the oven at 180 degrees for 30-40 minutes until it is bubbling and is golden brown on top. Serve hot with fresh vegetables. Enjoy!
