These tasty quinoa breakfast muffins ensure that you can have a healthy breakfast even when you’re on the go! The recipe makes a batch of 12 so you can bake them at the beginning of the week and use them throughout for breakfast, or just for a healthy pre-workout snack.
Quinoa is a good wheat-free alternative to starchy grains and is a great source of calcium, magnesium and manganese. Plus it contains twice the protein content of rice and is full of fibre; 100g quinoa has around 14g of protein and 7g fibre. It is perfect for creating the fluffy texture of a muffin whilst still allowing you to maintain a well-balanced diet.
In these delicious breakfast muffins you can swap the raisins for dried fruit, meaning you can mix up your breakfast to whatever you fancy each week! They’re perfect little treats to fuel your morning.
Ingredients to make 12:
- 1 cup quinoa, rinsed
- 1/4 cup vegetable oil, such as safflower, plus more for pan
- 2 cups all-purpose flour, plus more for pan
- 3/4 cup packed dark-brown sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup raisins
- 3/4 cup whole milk
- 1 large egg
- 1 teaspoon pure vanilla extract
