Food Friday: Cinnamon, banana and blueberry muffins

Resisting cravings for something sweet can be difficult at times, so it’s nice to satify them with something relatively low fat that has a couple of health benefits too.

This week’s #VincoFood pick is cinammon, banana and blueberry muffins, shared via The Hairy Bikers.

One reason we’ve chosen this recipe is because it suggests 50g rather than 100g of sugar. This is a useful tip if you’d rather feel less guilty when baking. The sugar can sometimes be halved. 

As well as being packed with fruit, cinammon can be a popular remedy for the common cold. 

Also, though it won’t lead to long-term weight loss on its own, the spice has been shown to lower some of the negative effects of eating high-fat foods and can compliment an existing diet and exercise plan.

If you don’t like any of the flavours here, you can always mix up your muffins. One way of doing this would be to add oatmeal. 50g of porridge oats would work with this mixture.

Here’s what you’ll need:

Ingredients
250g/9oz plain flour
2 tsp baking powder
1 tsp ground cinnamon, plus ½ tsp extra for the topping
pinch of salt
2 ripe bananas, mashed
150g/5oz blueberries
3 tbsp honey
3 tbsp vegetable oil
1 large free-range egg
185ml/6fl oz milk
50g/2oz caster sugar
